Master the techniques in mixing doughs such as danish, sweet roll, croissants, puff pastry and phyllo. Create traditional breakfast pastries, strudel, baklava, Napoleons and the appropriate fillings.
Prerequisite: HIA 115◊ and HIA 128◊
